Why has my honey crystallised? Is it spoiled?
Crystallisation is a natural process and a sign of pure, raw honey. Processed and adulterated honey rarely crystallises. You can gently warm the jar in warm water (not boiling) to re-liquefy it. Crystallised honey is perfectly safe and delicious to eat.
What is the difference between raw and processed honey?
Raw honey is strained at low temperature to remove wax and debris, preserving all enzymes, pollen, antioxidants, and antimicrobial compounds. Processed honey is heated to 70–80°C, which destroys most of the beneficial compounds and creates a uniform, clear, non-crystallising product with much lower medicinal value.
Which honey is best for immunity?
Tulsi honey is our strongest recommendation for immunity – the Ocimum sanctum (holy basil) flower nectar carries natural antimicrobial and adaptogenic properties. Multi-flora honey is also excellent as it contains a wide spectrum of pollen and plant compounds. Mix either with warm water and a dash of ginger each morning.
Is neem honey good for diabetes?
Neem flower honey has a lower glycaemic response than regular honey in some studies, and the naturally occurring compounds from neem blossoms may support blood sugar management. However, diabetics should consult their doctor before adding any honey to their diet, as honey still contains natural sugars.
How should I store honey?
Store honey at room temperature, away from direct sunlight. Do not refrigerate – cold temperatures accelerate crystallisation. Keep the lid tightly closed to prevent moisture absorption. Properly stored pure honey has an indefinite shelf life – archaeologists have found 3,000-year-old honey in Egyptian tombs still perfectly preserved.
Can I give honey to my baby?
Honey should NOT be given to children under 12 months of age. Infant botulism is a rare but serious risk. For adults and children over 1 year, raw honey is safe and beneficial. Always consult a paediatrician if in doubt.
