Most commercially available jaggery in India is made using chemical clarifying agents like sulphur dioxide (SO₂) and artificial colour (caramel or chemical dyes) to achieve a uniform golden appearance. Sulphur dioxide is a known allergen and respiratory irritant, and its presence in food grade jaggery is regulated but frequently violated by small-scale unregistered producers.

Frequently Asked Questions – Organic Jaggery

Is jaggery better than brown sugar?
Yes. Brown sugar is simply refined white sugar with a small amount of molasses added back in – it still undergoes the same chemical refining process including sulphur treatment and bleaching. Jaggery is made by concentrating raw sugarcane juice without any chemical refining, retaining all natural minerals, vitamins, and molasses content in their natural form.
Can diabetics eat jaggery?
Jaggery has a lower glycaemic index (~65) than refined sugar (~100), meaning it causes a slower blood sugar rise. However, jaggery still contains significant natural sugars and is NOT suitable for active diabetics as a replacement for sugar without medical guidance. Diabetics should consult their doctor. Palm jaggery has a slightly lower GI than sugarcane jaggery and may be a marginally better option.
Why does organic jaggery vary in colour and texture?
Natural variation in colour (from pale gold to deep brown) and texture (soft to hard) is completely normal in chemical-free jaggery and depends on the sugarcane variety, season, cooking temperature, and water content. Uniform golden-coloured commercial jaggery is usually treated with sulphur or artificial colour. Our variation is a sign of authenticity.
What is the difference between jaggery powder and jaggery cubes?
Both are made from the same pure sugarcane jaggery. Jaggery powder is finely ground for instant dissolving – ideal for baking, beverages, and recipes where uniform mixing is important. Jaggery cubes (or blocks) are the traditional solid form – better for cooking in batches, longer shelf life, and authentic taste in traditional recipes like chikki and halwa.
How should I store jaggery?
Store jaggery in an airtight container at room temperature, away from moisture and direct sunlight. In humid climates (especially monsoon season), keep it in the refrigerator to prevent melting and mould. Jaggery powder tends to clump in humidity – a small packet of food-safe silica gel in the container helps. Properly stored jaggery keeps for 6–12 months.
What makes palm jaggery different from regular jaggery?
Palm jaggery (Karuppatti) is made from the sap of palmyra or date palms rather than sugarcane. It has a distinctly smoky, complex flavour unlike the straightforward sweetness of sugarcane jaggery. Nutritionally, palm jaggery has a slightly lower glycaemic index and higher potassium content. It is widely used in Tamil Nadu, Kerala, and Andhra Pradesh in temple offerings, herbal medicines, and regional desserts.
