Palm Jaggery (Karuppatti in Tamil) is made from the sap of Palmyra palm trees (Borassus flabellifer), not sugarcane. The sap is collected by tapping the palm flower clusters, then slowly evaporated into a dark, aromatic block with a distinctive smoky-molasses flavour unlike any sugarcane product.
Palm jaggery has a significantly higher mineral content than sugarcane jaggery β particularly iron, potassium, and calcium. It is widely used in South Indian traditional medicine for its cooling properties and is considered particularly beneficial for women's health in Ayurveda.
